Plantain is a staple food that can be eaten unripe ripe and over-ripe. Therefore plantain is one of Nigerian foods you can never be bored with in the kitchen.
It can also be fried, boiled/cooked or roasted/grilled.
However, when plantain is overripe, most people believed that it is already useless and just disposed it, meanwhile it is still useful in many ways.
Over-ripe Plantain Recipes include,
plantain chin chin
Plantain bread
Plantain moi-moi
Plantain puffs
Plantain cakes
Plantain pies ,among others.
In this edition, I am going to write on overipe chin chin recipe.
INGREDIENTS
2 fingers of overripe plantain (The main ingredient)
2 cups of all purpose flour
1tablespoon of butter
1 tablespoon of sugar (optional)
Half teaspoon of baking powder (optional)
Half tablespoon of nutmeg
A pinch of salt

PROCEDURE
Mash your overripe plantain and set aside. Rub your butter on the flour until it looks like a breadcrumb. Then, put all the ingredients (mashed plantain, nutmeg, sugar, salt)and combine it to form a dough. Knead at least 7 minutes. Leave to rest for 5 minutes. Then roll out and cut to your desired shape and fry.
When you have an overripe plantain, , just try this .So tasty, delicious and yummy.
However, to know if plantains are bad or spoiled is also apt. Plantains that will typically become very soft, develop dark spots and start to ooze are not good; discard any plantains if mold appears or if the plantains have an off smell or appearance.
